Ingredients

60 ml white rum
25 ml simple syrup
25 ml lime juice

Directions

Fill a shaker with ice.

Add all ingredients to the shaker and shake till well chilled.

Strain into a chilled coup glass.

Mai Tai

Ingredients

30 ml dark rum
30 ml white rum
15 ml Cointreau
15 ml orgeat syrup (amaretto can be used as a substitute)
30 ml lime juice

Directions

Fill a shaker with ice.

Add all ingredients to the shaker and shake till well chilled.

Strain into a chilled coup glass.

Grog

A long-time staple of the Royal Navy.

Ingredients

½ oz lime juice
1 oz water
1.50 oz dark rum (Pusser’s Rum – Gunpowder Proof for authenticity)
2 tsp sugar

Directions

Add all ingredients to a tin mug with ice and stir gently until the sugar is dissolved.

Venezuela Libre

An “improved” Cuba Libre said to have originated in Venezuela.

Ingredients

¾ oz lime juice
3 oz cola
½ oz gin
1 ½ oz rum
2 dashes Angostura Amoritic Bitters

Directions

Half fill a highball glass with ice.

Add the ingredients to a cocktail shaker and shake well.

Pour into glass over ice.

Kentucky Mule

The Kentucky Mule is a variation of a Moscow Mule using bourbon instead of vodka; the stronger taste of the bourbon cuts through the taste of the ginger beer more aggressively than the vodka of the original, resulting in a more flavourful drink.

Ingredients

2 pt Bourbon
½ pt Freshly squeezed lime juice
5 pt Ginger beer

Directions

Fill a copper mug or high ball glass with ice.

Add the 2 parts bourbon and ½ part lime juice.

Top off with the ginger beer.
